Day off= Running/Food Diary Day

Clearly this post is just going to be an account of my training and eating today! I had today off and it was really relaxing, even with a lot of exercising and healthfulness mixed in there! This morning I woke up around 8:30 and got ready to go see Jeff at 10. We had a nice workout, warmup 1 mile run, then a torture circuit. Not really Im being a bit over dramatic, but it was harder than my workouts have seemed lately. The highlight of the day was Bosu Ball squats. I know he reads this so I shouldn’t say this because I like to mess with him, but I really enjoy new things like that. They are challenging but it feels great when you can do them, just like as my mileage increases I think wow that was hard, but it did pay off.

Before I caption this picture, I just wanted to say clearly I am a professional photographer, due to my background of mail, my nook and lysol wipes that really have nothing to do with the picture.

After my workout I went to Target I wanted to pick up some protein, and also those vitamins. Lets be honest I dont take vitamins ever, but vitamins that are gummies and have omega 3 in them yes please! The bowl is my breakfast when I got home, the Mango Chobani is in the bowl already I just figured I would give them some free advertising! :). The bowl is yogurt, honey and a handful of apple cinnamon Cheerios!

Then I was lazy and did some laundry and watched TV. I ate a salad for lunch, but it was nothing special so I did not take a picture. I have been extremely tired lately, no clue why so I ended up falling asleep. When I woke up at 3 it was time to get dressed and head out for my run.

It was nice to be outside, a bit chilly but still sunny and nice. I was still really tired, and I had picked up these while I was at target today so I popped a few in my mouth before I ran and got a nice energy boost half way through. I thought they had a great taste and will buy them again!

The cliff bars in the back are for Dan and I to bring a snacks or eat with a salad. The protein is really good and only 100 calories per serving and does not have a weird taste. The powerade energy blasts come with 5 of those packs in a box and they have quite a bit in each package, but I only needed three today.

My run was supposed to be 39 minutes, Week 3 Day 2 of Ease Into 10k, but I wanted to hit 3.5 miles, so I went 40 minutes! The nice thing about the training program is it tells you when you are half way done, and lets me know when it is time to turn around and come back. I could not take my usual route, since it is still snowy so I stuck to just roads. Overall I was really happy with the pace at 11:21 I was doing well and on pace to PR at my 5k on March 24th! I did push myself in the run, but was not overly out of breath or winded too badly!

When I got home I stretched a bit, and decided I really was not very hungry so I whipped up a protein shake in the blender for a liquid but satisfying dinner!

Two scoops EAS Lean 15 Protein Powder, 4-5 frozen strawberries, and a cup of milk!

It was yummy and good enough to fill me up! I had to find something to have after my runs as I cannot have chocolate milk right now (I gave up most unnatural sugars for lent), and apple juice (unsweetened) with glutamine was not a good call. This was great! I liked the taste and I think the strawberries helped a lot. If I can pull my butt out of bed in the mornings and get my run done, this will be my new breakfast!

Detoxing…a love story

Well its not REALLY a love story but kind of! You see thanks to my little medical issues I am not really supoosed to eat meat, dairy, or anything with yeast, but I do and I love it! My body and my waistline not so much, sickness and bloating no thank you! I have tried vegan diets before and not really a big fan. There are somethings that indeed actually taste better than the “real” thing. (Yes vegan chocolate cake I am speaking to you.) Then there are the not so good attempts, mustard, nutritional yeast and other spices do not make cheese sauce, and I am quite impartial to a good mac and cheese.

So I guess you can pretty much guess that I haven’t been eating like I should. A few weeks ago I picked up the magazine whole living and there was a 21 day challenge in there. It is a detox program so no dairy, no meats, no breads and most importantly to me right now NO SUGAR! Dan and I are both giving up sugar for lent, so I figured why not start a whole day early like a good girl!

I know this is the point you are thinking ew detoxes are so gross, all I can have is lemon water with maple syrup and pepper in it. My answer is FALSE this one is really good, and pretty filling! Plus that whole master cleanse drink is garbage, and tastes like absolute crap, I don’t care which celebrity totes it next. CRAP I SAY!

You can find the entire plan HERE, the food is actually really delicious so far and yes it is REAL food. Real in the sense that it isn’t sticking you to just juices and soups (though they are there), and real in the sense that you are eating WHOLE FOODS, no aritifical or proccesed junk here. The Detox does warn you may be really tired and get headaches the first couple days, but since niether Dan or I drink much coffee or soda I think we should be okay. He was super hesitant to do it, but I think we are both pretty happy already and usually the first and second day are the hardest!

We did have a really delicious dinner last night before the detox began. You better believe I was eating meat, cheese and pasta one more time!

The sausage in our pasta was from Omaha Steaks, and was a great wedding gift! Thanks Shawn and Michelle! 🙂 The yogurt is greek yogurt and I have to say I almost like it better than Chobani which I know is blasphemous but you know.

Okay now onto pictures of today’s meals. Im not going to lie and tell you that I did not spill that juice all over my car because I did! Oh well it was still okay, ginger, carrot and grapefruit juice for breakfast


 There are also snacks todays were fruit and nut snack balls and roasted cauliflower.

Dried fruit and nuts, and sunflower seeds food proccessed together then rolled into balls.

Lunch was a great salad of kale, red cabbage, carrots, and a dressing made of apple cider vinegar, dijon mustard, olive oil and salt and pepper.

 Oh yea there was walnuts and sunflower seeds as well.

Finally let me end the entry with I got a free pineapple from bigy thanks to this gold coin!

By the way the post is titled a love story because this is a detox you can actually stick with and is full of what I SHOULD be eating.

Bad outfit choices, loner cars and great dinners!

Dan and I went to the gym this morning before work! We went to the new Cardio Express in Vernon, it is really nice. I was excited to use the new treadmills they have. WHOMP WHOMP! I wore these new yoga pants I bought in a medium, or that is what the hanger said, they were larges and thus way to big for me to be running in. I swear at one point I had the waist band over my belly button and still falling. Really hoping I can shrink them. All the outfit rearranging led to a very frustrated me who walked fast more than running and thus ended up with this!

1.8 in 14:13?!?!?! WHATTTTT HORRENDOUS!! Oh well there is always tomorrow to wear shorts and actually bust out a good run!

PLUS THEY HAVING SPINNING CLASSES, Really want to get into doing those to build my leg strength and overall endurance!

We then decided to do some abs!

Hahaha, you can totally see Dan’s head in the mirror and only my forehead because he is so tall and also yelling at me for taking pictures while working out. Also hey pink sneaker :). I had an 8lb medicine ball Dan a 12!

We did a circuit of 2 sets of each, we were going to do three but had stuff to do before work. Yes we did sit ups on the big balls, I did mine slow up for 4 then down for 4. We also did those things where you rest your shins on top of the ball and tighten your abs and roll the ball in. Then we did side touches with the medicine ball, and bell ringers, and hip bridges. AND PLANKS! I can still do them for a minute and side planks for 40 seconds. I was really glad I have kept some of my strength from training with Jeff, even though I have not been able to go since November. However I can go again at anytime, and will definitely love every second!

After the gym we had to drop my tank of a car off and pick up this bad boy loner! Somehow a nail got in my tire, my axel boots ripped (maybe because 500 trees fell in our driveway!) and I needed an oil change.

Hey little house :). Yes we have a red house with a tin roof, you can thank my father. We do every time it rains! You see our house was built by my grandfather in the 50’s and was the first house my dad lived in so it had to be restored to original condition. So even though it is loud when it rains, it is awesome for snow because it slides right off! Plus I am very sentimental and think its cool we live in my Memere and Peperes old house, but they are not married anymore. (Clarifying because eventually they will be in the blog with their “new” spouses and I don’t want anyone confused.) My grandma is my mothers mom, and she has dinners Wednesday. My grandpa is in heaven, so yes I have 5 living grandparents and one that I love with all my heart that I wish I could see again!

Anyway back to the car, I had an ’05 Altima before my Armada so when the choice came between this one and the rouge you knew what I would choose! It is pretty sweet! MEMORIESSSSSS!

Then we went to work 12-8! After work we went to Chili’s for dinner I had already eaten dinner at work but Dan was really hungry and this was my Valentines dinner out. (Chilis is my all time favorite restaurant, say what you will but I love it!)

So I figured I could score a nice lunch for the next day, and mission accomplished (I know you are all worried about my nutrition!)

Sweet and Spicy chicken, from the healthier menu items they offer. Steamed broccoli, rice and chicken in a habanero/orange glaze. AWESOME!

P.S.- the one bite I took out of the chicken was pretty much it, all of that went into a takeout container to accompany me to my office tomorrow!

Dan got Taco’s they also looked good, and yes I snuck a picture of his food.

he already ate one and the rice and beans.

Okay well I have to go to bed now, I am feeling bad about today’s run and thinking about tomorrows! Plus I have to get it done early in the morning. Goodnight friends, and feel free to leave me some comments, because I really enjoy them!

Recipes Low Calorie Pancakes and Brown Sugar Garlic Chicken!

As requested here is the recipe for the pancakes! Just divine! Under that I am including the chicken recipe from dinner last night, so good! Also a picture, the Potato Skins turned into Potato Casserole as I was not delicate enough with scooping the sweet potatoes out, but oh well still tasted great!
“Blintz” Pancakes with Blueberry Syrup
Makes 8 silver dollar pancakes, serves four. From “Cook Yourself Thin Faster.”
3/4 cup low-fat (1%) cottage cheese
3/4 cup fat-free sour cream
1/2 tsp vanilla extract
1/4 tsp baking powder
3/4 cup all-purpose flour
1 pinch salt
2 egg whites
2 tsp sugar (I leave this out and they come out just fine, but if you want a little sweetness, the calorie count below includes it).
cooking spray
1/4 cup pure maple syrup
1 cup blueberries 
1. In a medium bowl, mix the cottage cheese, sour cream, and vanilla.
2. In a small bowl, mix the dry ingredients (except the sugar), then gently stir into the cheese mixture.
3. Using a standing mixer fitted with a whisk or a handheld mixer, mix the egg whites and sugar together until soft peaks form. They will have doubled in volume; do not overmix or they will become dry.
4. With a spatula, mix in one third of the whites to lighten the cheese mixture, and then gently fold in the rest of the whites.
5. Spray a large griddle or nonstick pan with cooking spray and heat the pan over medium-high heat. Using a 1/4 cup measure or large spoon, drop dollops of batter onto the hot pan and smooth to form silver dollar pancakes. Cook for 2 to 3 minutes until lightly golden brown and turn, cooking an additional 1 to 2 minutes until cooked through. Keep warm as you cook the remaining batter.
6. For the syrup: combine the maple syrup and the blueberries in a small saucepan and cook over low heat until the mixture is warm, stirring occasionally, about 2 to 3 minutes.
Calories: 250
Total fat: 1g
Sodium: 467mg
Sugars: 22g
Brown Sugar & Garlic Chicken Breasts
The original recipe called for breasts but I had boneless skinless tenders so that is what we used.
  • 4 Chicken breasts or 8 chicken tenders
  • 4 tablespoons Brown Sugar
  • 3 tablespoons olive oil
  • 3 cloves of garlic chopped finely or pressed


Mix everything excpet chicken into a sauce pan and heat over meduim heat, whisking until smooth. Put chicken into a casserole dish LINE IT WITH TIN FOIL, OR YOU MAY LOSE A GOOD BAKING DISH R.I.P. PYREX :(. Pour sugar mixture over chicken and bake at 450* for 15-20 minutes. The combo will bubble up and the top/sides of the dish may look bruned when it comes out, but it isnt! You may want to add a bit of extra oil or water before cooking.

Still really good as pictured below!

Let me tell you none of that chicken was burned, I know that last piece looks like it got quite the suntan, but it was so delicious!

This was Dan’s plate I ate while he was at the gym, and I ate it all then realized NO PICTURE, I need that for the blog!!!!

Favorite foods made lighter!

Sunday I was not able to do much, but I was able to cook a lot of food to prepare for the week!  I don’t know if anyone has ever seen the show or owns the cook yourself thin cookbook like I do, it is awesome! You can still eat your favorite foods and lose weight with easy swaps that cut calories and not flavor!

For breakfast I made blueberry Pancakes, made lighter with cottage cheese, sour cream and egg whites. They are so fluffy and light and do not use any sugar! If you warm the syrup and blueberries together in a pan before serving it is heavenly!

I do make substitutions to each of the recipes as I do not like walnuts in muffins, and I didnt have some things on hand for the other recipes but I made it work!

I also made some hash, everyone loves corned beef hash, but it is so fatty! We didnt eat any of it yesterday but we have enough for the week. Substitute sweet potatoes and tofu, (i know tofu scares alot of people, but if you roast it in olive oil and seasonings with the sweet potatoes, it is THAT much yummier!) The orginal recipe calls for baked tofu, however I wanted it to pick up flavors better so I roasted it.

Tofu and sweet potatoes, onions and jalapenos, all for the hash.

Please excuse the inside of our fridge, but I also made some turkey chili. We have it for lunch for the week, it is hot but cut down with cocoa powder and cinnamon. Really delicious!

Finally for dessert last night we had the best thing of the whole weekend!

Greek yogurt, mixed with melted white chocolate, some heavy cream and raspberries and sugar so they would release juice. It was 264 calories and so good, much better than ice cream! The original recipe calls for strawberries, but since our local supermarket did not have them in stock, due to a large sale I used my FAVORITE FRUIT!

I will not post the recipes here, since it would be the LONGEST post ever! But if people would like them I will post them into separate posts!

Tonight for dinner we are having brown sugar and garlic chicken and sweet potato twice baked potatoes!

I will post later and really hope to be able to get a run in, my back is really not doing well today!

I married Tim Tebow and Green Monsters!

Well obviously not really because he is about 5-6 years younger than I am, is a holy roller and lives in Colorado! However the resemblance is quite uncanny! My brother was the first to notice it, and now as Tebow mania is on the rise more and more people tell him and sometimes mistake him for the second coming(<——Sarcasm by the way) Tim Tebow!

He really doesnt look so much like him in pictures but they are basically making the same face here, and Dan is holding our Dog Nephew Sugar!

However Dan is told countless times a day he looks like him and a man at a sporting goods store ran to help him thinking he actually was him! Yes because TT has no place better to be on a saturday night then Tolland, CT…..oh he does darn. Also on our honeymoon countless people told dan he looked just like Tebow, thus when we go to Mexico in May for vacation Dan is bringing a Denver Broncos Shirt :). He likes to mess with people and it should be pretty interesting.

I was really ill today so I took the day off from running as I was really drained. It did get me to thinking about energy though and my favorite smoothies! I love Green Monsters, they are usually milk, yogurt, a banana and Spinach….thats right! They are so delicious and nutritious and a lot better for you than caffeinated beverages! I like to modify mine by using 2 cups raw spinach, a cup of low fat/fat free vanilla yogurt, almond milk, 1 banana and a handful of frozen strawberries! I promise you, you wouldn’t even know there was spinach in there if there weren’t little green flecks in there. The blender takes care of it and the taste is so heavenly! I usually have one for breakfast if I do a morning workout and it keeps me full for a very long time! Someone I know once tried it with frozen spinach, DO NOT DO IT! Unless you want a smoothie you can chew I wouldnt!

Okay well it is 10pm time for bed! Hoping to feel better tomorrow and have a super productive day!

I am a huge giants fan so clearly them, Dan does not like sports but I know he likes Tim Tebow as he said last night he hopes they beat the Patriots!

I love chocolate milk with a scoop glutamine because it does not taste like anything. (like protein can) and because I hate milk so very much but I know I need the calcium, and an apple. Plus usually I just drink water during the day so its kind of a treat!
