St. Patrick’s Day, A Birthday and Good News!

Happy St. Patrick’s Day to all my fellow Irish people! If I didn’t do a post on St. Patrick’s Day I would have three people upset with me! My Grandma (or Gma) because her mother was Irish and my Memere, because she is 100% Irish. (She’s Memere because my Pepere is French). Finally my Aunt Tamarra, one because were all Irish, but two because today is her Birthday!

Happy Birthday Aunt Tamarra!!! (Her name is pronounced like when people say tomorrow wrong down south or in Maine (going by Murder She wrote), her name is NOT Tamera or Tammy…so don’t even try it.)

Tamarra loves being born on this day she even has a tattoo of a shamrock and sunflower!


This is my Aunt   ^   I know I have used this photo before but I love it!

It was from her first 5k! (Color Me Rad), that was a great day with my Aunts and my Uncle Bob. My Aunt’s support me in everything I do and I am so lucky to have such wonderful fans, and an amazing family! They will always be there to cheer you on, cheer you up, and make you laugh!

My Aunts Tamarra and Kim and my mom all look a like and a lot of people they went to school with tell me I look like Tamarra when they first meet me. You can decide for yourself based off the above photo!

I am super close to both my Aunt’s and they are like my second and third Mom’s, I can talk to them about anything and get their advice on a lot of things!

Plus I know I hold a special place in Tamarra’s heart because I was her “ring bearer” at her wedding. I was 24 when they got married FYI, but that’s another story!

Finally for the good news! I had a Doctor’s appointment today and was taken off one of my prescriptions so I only have one left. Hopefully soon everything with be regulated with me and my health will be normal, that would be so exciting! For the first time in I don’t even know how long I feel normal, not tired, not sick, not oversensitive, just happy and normal! I had also lost almost 10 lbs since my last appointment, things are beginning to work out for me and become positive! Just have to keep this momentum going!

Rainbow Cupcakes Recipe!

Yesterday was St. Patricks Day and I brought two kinds of cupcakes to work. For the second kind, and to make kids more attracted to these ones, I made them rainbows! Plus mixing them with some funfetti frosting really upped the appeal! Finally before pictures and the recipe this whole giving up sugar for lent has been really hard! ESPECIALLY TIMES LIKE THESE! Plus the recipe was so easy, which I really needed seeing as how I still had Irish Soda Bread and Car Bomb Cupcakes to bake at 10pm on a friday night, I get tired early!

Rainbow Cupcakes: 

1 Box White Cake mix….I used Duncan Hines

2 Eggs

1 Cup Sour Cream….full fat not light

1/2 Cup Milk

1/3 Cup Vegetable Oil


Combine all ingredients in mixer beat on high speed for 3 minutes or until batter becomes thick!

Once you decide how many colors you want split the batter evenly between bowls. I decided to go for 4, as the recipe makes 14-16 cupcakes but I wanted 12 large ones. Next mix the food coloring into each bowl and mix together until you get the desired color. (If you want to make these for Easter you could go for more pastel colors).

I used red, green, blue and yellow.

Then fill the muffin tins with paper liners and layer your batter. The trick to it not sticking to your fingers is to dip them into water. Then you rub the batter to smooth it down. I went for different color combos in each cupcake and was not worried if some colors were thicker than others.

When you are ready place the cupcakes in the oven and bake to package instructions.


When they are cooled frost with your favorite frosting. I only had enough butter to pull off a buttercream for my other cupcakes so I went to a canned frosting, and the best one at that! Funfetti is always a winner.

Plus those sprinkles keep it super happy!

These cupcakes can be made to cheer you up, celebrate a child’s birthday or just anything, they look gorgeous and like you slaved away all day to pull this off and only you and I need to know you did not!

The blue and yellow were a bit too thin on this one, but it was randomly pulled and I took a picture thanks to my co-worker Erika volunteering to eat it! Still cool looking though!

Weekend Workouts!

Happy St. Patrick’s Day Everyone!!!!!! 

Yesterday I went to train with Jeff in the morning, it was great! There was a lot of ab focus yesterday and was sore in my tummy even while I was doing it. 

I was feeling good after we were done and ready to take on the day! Which explains why later in the day when I held running group with the girls, we were able to go 3.15 miles and at one point I was holding a 10:12 pace! I would have kept it up but decided a proper cool down was necessary for everyone. The girls are progressing so well and I am so glad to be helping them in their goals! 

I am off to dinner with friends to celebrate the Holiday and will be posting recipes for these….
